This Paleo Turkey Hash Recipe was inspired by a breakfast I had in Manchester, Vermont. Combine ground turkey, peppers, onions, and potatoes for a well rounded breakfast. Top with fried or poached egg for extra protein (and extra deliciousness).
Paleo Turkey Hash Recipe
1 lb Red Potatoes, chopped
1 Yellow Onion, chopped
1 Green Bell Pepper, chopped
1 Jalepano, minced and seeded
1 lb Ground Turkey
Salt and Pepper
- Preheat oven to 400F. Place potatoes on baking sheet. Sprinkle with 2 T olive oil, salt and pepper to taste. Roast for about 35 minutes, until cooked through.
- While potatoes are roasting, heat 2 T olive oil in frying pan over medium heat. Add onion and peppers. Saute for about 8 minutes, until onion is translucent and pepper is cooked through.
- Add ground turkey and saute for about 10 minutes, until turkey is browned and cooked. Season to taste with salt and pepper.
- Add roasted potatoes to pan. Saute for 2 minutes. Adjust seasoning and enjoy! Top with fried or poached egg if desired.
